Ingredients
  

For the stuffing

  • 1 cup fresh spinach Washed and chopped
  • 1/2 cup feta cheese, crumbled Creamy and tangy
  • 1/2 cup roasted red peppers, chopped For sweetness and color

For the salmon

  • 4 fillets salmon Skinless, for even cooking
  • 2 tablespoons olive oil For drizzling
  • to taste Salt and pepper
  • Lemon wedges For serving

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix together spinach, feta, and roasted red peppers.
  • Cut a slit into the side of each salmon fillet to create a pocket.
  • Stuff each fillet with the spinach mixture.
  • Drizzle olive oil over the stuffed salmon and season with salt and pepper.

Cooking

  • Place the salmon on a baking sheet and bake for 20-25 minutes or until cooked through.
  • Serve with lemon wedges.
